All I can say is YUM. A traditional Mexicano Burrito. Fresh everything, the Beans, the Salsas, the Pico de Gallo and even the Tortilla. What more could a girl ask for?

My Kid’s favorite from Childhood to Adulthood place to grab a bite. Closed a while back. Shorty’s was the go to place. From Soup to Sandwich’s all fresh made there including the Bread and Bagels. A couple of weeks ago he noticed there was a new place that opened in the shopping center where Shorty’s used to be The Tokyo Grill. So, last night I stopped by there on my way home and picked up dinner. I couldn’t make up my mind everything sounded Yummy. My Kid wanted Yakitori(Grilled Chicken Skewers) and a couple California Rolls. I finally made up my mind kinda. I ordered a Tuna and Avocado Roll, a Salmon,Avocado and Cucumber Roll and a Tuna and Cucumber Roll. OK, I know 3 Sushi Rolls for one. Why not? Next time it’s a Rainbow Roll or ????? It was so good and no I didn’t finish all 3, but I sure tried 🙂wpid-20140814_192111.jpg

Pictured: Fresh made Almond Cookies and what I couldn’t finish at dinner, but proceeded to munch on later in the night.It was so YUMMY!!!

I’m not a big snacker. If I want something snacky I usually make it into my lunch.

SIMPLY GUACAMOLE

1 preferably  Haas Avocado mashed well
1 Scallion finely sliced
2 Grape Tomatoes diced small
A squeeze of Lime
A sprinkle of Garlic
Cilantro if you have it on hand
DONE Remember to taste and taste again 🙂

Quesadillas…Oh my….so YUM

imageI am so hoping for leftovers for lunch….a girl can dream. I made more than are shown. My Kid snatched a couple before I knew it. Gotta love it!!!!!

imageOn the Griddle are both Flour and Corn Tortillas. I prefer Corn(those are the smaller ones) My Guy  & Kid like their Flour. Works for me 🙂

Leftover meat if you want……Chicken, Beef  or ????????

Good Flavorful Cheese. I had one of those sliced Cheese things from the Holidays. I made the Flour ones with a good Sharp Cheddar and the Corn with Havarti. Rice Cheese and no Meat would be a perfect Vegetarian/Dairy-free munch. This is one of the easiest Flexatarian meals.  The fillings are limitless. Says a girl that puts almost everything in a Tortilla. My Kid once even requested Fruit Salad be put in a Tortilla so he could go back outside to play.

FYI: Quesadilla roughly translates to Cheese n Tortilla or little Cheese snack. HA HA HA :).  I always laugh when I see a Cheese Quesadilla on a menu. Adding meat is a good way to use up  small amount of leftovers. Ideally, I would have served this with Pico de Gallo and Avocado. I didn’t it was late on a weeknight and I just wanted to eat.
