Hummus made simple and cheap

2 cans Garbanzo Beans AKA Chickpeas. Rinsed well!!!

Juice of about a half a Lemon or to your taste

a clove or more of Garlic finely minced or use the minced in the jar or the Garlic in a tube and really if push gets to shove use granulated or powder.Just be careful after it sits for a while it tends to get spicy.

a touch of Sesame Oil or about a spoonful of Tahini (Sesame paste). To taste.

Place all the ingredients into a Food-processor, a Blender or even use a Potato masher. Whatever works for you.

Your done. It stores in an airtight container I’d say for about a week.

Cost for 24 ounces of Hummus maybe $4. Cost at a Grocer 10 ounces on sale $4

Time to prepare less than 10 minutes.

Ok, I know it’s Thursday. We’ve had a hectic week to say the least 🙂

We all wanted something different for Dinner the other night. I wanted a Sweet Potato/Yam. My Guy wasn’t feeling good. So, he wanted Ramen (of course). My Kid found some packaged Crescent Rolls, Ham and Cheddar in the fridge.

This it he came up with. He rolled the package of Crescent Rolls out and split it into 2. Layered the Ham and Cheese. Rolled them up and baked to the Crescent Roll instructions. YUM

Playing with Ramen

Sautéed Green Beans and Carrots in Butter with Garlic. Cook til tender add some Chicken(is you have any leftover from something else) or not 🙂 , Balsamic Dressing, Scallions, the season pack from the Ramen and a touch of Lemon Juice. This is just one of the many Ramen creations my kid makes.

FYI: To my Vegetarian and Vegan followers just skip the Chicken, Butter(use a good quality Oil of your choice) and the season packet. Maybe add some Teriyaki or some Bragg’s

Caprese Salad

Dressing: Balsamic Vinegar, Olive Oil, Garlic, Parmesan, and Fresh Cracked Black Pepper.

Mix well and let talk for as long as you can wait. Drizzle over the Tomatoes, Basil and Mozzarella. Chill til ready to eat.

Since I didn’t make it to the Farmer’s Market this weekend. I am running out of  fresh produce. Which in a way is a good thing. Being able to use up everything just means more room for all the Yum I’ll find this weekend. I have tagged this as Vegetarian/Vegan to share the simple veg dish that could be turned into a balanced Vegetarian/Vegan dish with just a couple of additions.

I steamed the Potatoes, added a 1/2 Teaspoonish of Coconut Oil. Browned the Potatoes and added the Green Beans. Cooked with the lid on the pan til Green Beans were done. Added the Leftover Chicken and baked for a bit to warm the Chicken.Done!

To turn the Veg Dish into a terrific Vegetarian/Vegan dish. Just bump up the veggies. Add Mushrooms, Corn, Beans(Legumes), Tomatoes, anything that you love. It will work out great.
