Caprese Salad

Dressing: Balsamic Vinegar, Olive Oil, Garlic, Parmesan, and Fresh Cracked Black Pepper.

Mix well and let talk for as long as you can wait. Drizzle over the Tomatoes, Basil and Mozzarella. Chill til ready to eat.

Baked Salmon seasoned with Simply Greek Seafood Blend

2 ways. My Guy likes his Mahi Mahi grilled with Pesto. I like mine grilled with Simply Greek Seafood blend (link on homepage).

As for the pasta. I picked up a box of pasta that look unique. Veggie Penne 🙂 Cooked, Drained and added Italian dressing while it was hot. Mixed well and refrigerated. When I have more time I add veggies to it for a terrific Salad. I like it with Beans added for a yummy weekday lunch.

I’ve been waiting and wanting an Artichoke soooooo. I found a couple nice ones worth their price, almost 🙂

Simply Artichoke

Wash, pull off any odd  leaves and trim the Stem.

Steam in a Steamer or in a Saucepan using a Steaming Basket. Cooking time is a bit iffy. Depending on the freshness of the Artichoke. To tell when done: the color will change to more of a Loden/Olive Green and the leaves will pull of gently. Please use Tongs when checking the doneness. It will save your fingers 🙂

There are various dipping condiments you can have. Some people like Melted Butter, some Mayonnaise. I like Mayo or  Plain Yogurt with  Tzaziki seasoning from Simplygreekfoods.com.

Never had one play with it. If you like Butter by all means try it with melted Butter. Like Mayo try it with Mayo.

I had an itch for YUMMY baked bottom of the bottle Chicken. I save all the little bits from the bottom of various bottled condiments and mix them all together with either White Wine if I have any or with White Balsamic Vinegar and use the mixture for baking Chicken. It always comes out YUMMY and it is never the same twice. This Chicken dish was made with Creamy Caesar, White Balsamic and Simply Greek Salad Blend.

imageGetting the Chicken ready. Bake at 350F for an hour or more covered.

imageAdd some Veggies under the Chicken. I had some Broccoli, Cauliflower leftover from our Veg-out Platter. I also added some Zucchini and Grape Tomatoes. Cover and bake for 20-30 minutes more. Til veggies are getting tender.

imageI had found some nice fresh Asparagus and the Dinner didn’t seem to have enough veggies for me.

I had an itch for fish..couldn’t find what I wanted. So,I decided to grab some Salmon. A little hesitant. Only because My Guy is/was so so about Salmon.

BTW: My Guy isn’t so-so about Salmon anymore. That’s a good thing since there is another piece of Salmon in the freezer. 🙂
