Since I didn’t make it to the Farmer’s Market this weekend. I am running out of  fresh produce. Which in a way is a good thing. Being able to use up everything just means more room for all the Yum I’ll find this weekend. I have tagged this as Vegetarian/Vegan to share the simple veg dish that could be turned into a balanced Vegetarian/Vegan dish with just a couple of additions.

I steamed the Potatoes, added a 1/2 Teaspoonish of Coconut Oil. Browned the Potatoes and added the Green Beans. Cooked with the lid on the pan til Green Beans were done. Added the Leftover Chicken and baked for a bit to warm the Chicken.Done!

To turn the Veg Dish into a terrific Vegetarian/Vegan dish. Just bump up the veggies. Add Mushrooms, Corn, Beans(Legumes), Tomatoes, anything that you love. It will work out great.
