Caprese Salad

Dressing: Balsamic Vinegar, Olive Oil, Garlic, Parmesan, and Fresh Cracked Black Pepper.

Mix well and let talk for as long as you can wait. Drizzle over the Tomatoes, Basil and Mozzarella. Chill til ready to eat.

Baked Salmon seasoned with Simply Greek Seafood Blend

Pictured: Summer Squash($2 a pound), Sweet Peppers and Poblanos($2 a pound), Potatoes($2 a pond), Broccoli($1.50 a pound), Tomatoes($3 a pound), White Peaches and Apples($2.79 a pound), Green Beans and  Lima Beans ($2.99 a pound), Cucumbers(3 for a $1), Garlic(2 for $1), French baguettes(sale 2 for $4) and  Milk(not pictured).

Since I hadn’t been for 2 weeks I bought what seems like a lot. It isn’t. We’ve already enjoyed 1 baguette, 2 Tomatoes, and 4 Apples. Today I’ll be using the Summer Squash, Green Beans, a couple of Potatoes, 1/2 a Red Onion, the Broccoli and maybe more. You’ll have to wait and see what I come up with 🙂

FYI: Do you know the average age of the Produce you buy? I do.

Since I didn’t make it to the Farmer’s Market this weekend. I am running out of  fresh produce. Which in a way is a good thing. Being able to use up everything just means more room for all the Yum I’ll find this weekend. I have tagged this as Vegetarian/Vegan to share the simple veg dish that could be turned into a balanced Vegetarian/Vegan dish with just a couple of additions.

I steamed the Potatoes, added a 1/2 Teaspoonish of Coconut Oil. Browned the Potatoes and added the Green Beans. Cooked with the lid on the pan til Green Beans were done. Added the Leftover Chicken and baked for a bit to warm the Chicken.Done!

To turn the Veg Dish into a terrific Vegetarian/Vegan dish. Just bump up the veggies. Add Mushrooms, Corn, Beans(Legumes), Tomatoes, anything that you love. It will work out great.

I have been thinking about Tall Ships for days now. I have had the opportunity over the years to see these magnificent Ships. I’ve seen them sail into San Pedro. I’ve seen them sail out of Baltimore. They never cease to amaze me. They make me smile.
