Simple and Yummers

1 large Squash: Patty Pan, Zucchini or any large Squash you are able to hollow out.

8 oz. of high quality Sausage

a small Onion finely chopped

a dash of Basil, Garlic(fresh if you have it), Oregano.

Cook up the Sausage with the Onion and Spices.

While that is talking. Wash and cut the center out of the Squash,. Similar to carving a Pumpkin. Hollow out the seeds. Place the top back on and Microwave for about 5 minutes or until tender. Let cool.

Once the Sausage is cooked. Place some Mozzarella(if you have it) into the bottom of the Squash with a bit of Parmesan. Stuff as much of the Sausage mixture into the Squash as you can. Top with a sprinkle of Parmesan and bake til brown. This shouldn’t take but a few minutes. Since all the ingredients are already cooked. This served 2.

It was a hit to say the least. If by chance you have leftovers. Pack it for lunch the next day. It will heat up wonderfully.
