woke up to a rainy day.  We decided to turn it into a Movie time kinda a day.

All you’re going to need:

1/4 Chopped Red Onion

1 small can Diced Green Chilis or Fresh or Roasted

2 or more Cloves of Garlic chopped

a handful of Grape Tomatoes chopped or canned Petites Dice  or  whatever you have 🙂

3 or more cans of Black Beans thoroughly rinsed or if you have the time (a couple of hours) use a bag of Dried Beans rinsed well also.

a pinch of Oregano (Mexican would be my choice) and Salt ( I use Pink Himalayan when I use Salt).

Stir well add about a 1/2 cup or a bit more Water. Place a lid on the pan and let it talk for 15 minutes or when you are happy with the texture.  I  don’t know about you for me it’s a textural thing when it comes to food.

This healthy, simple, reheatable, flexible and quick, Great for a snack, lunch and even a side dish. Serve it with Corn Tortillas, Rice, Quinoa or ??????? Or with  Hot Sauce and a Spoon 🙂
