for traditional LA style Carnitas……
Semi-Boneless Country Pork Ribs. Mexican Oregano, Garlic and Lime Juice. Simmer til it falls apart.

Serve with Corn Tortillas and Pico de Gallo.

FYI: There are so many different ways you can serve this simple meal. So many cuts of Pork you can use. One thing make sure the Pork has some fat. The meat can be used for everything from Tacos, Enchiladas, Tamales. My Kid would probably even put BBQ sauce on it 🙂
