We had an exhausting weekend. I really wanted to spend time in my room (Kitchen) this weekend, but it just wasn’t meant to be. I finally found some time to experiment with an Orzo idea.


I cooked up a box of Orzo (I wanted to have some for other fast sides this week) and set it aside. Chopped up a Sweet Yellow Pepper, a handful of small Tomatoes, Fresh Basil (all from my local Farmer’s Market) and lightly roasted Pine Nuts. I sauted the ingredients minus the Basil and Pine nuts in Olive Oil and a clove of Garlic. I then added some of the Orzo. Mixed it well and let it talk at a low simmer for a few minutes.While I was grilling the Mahi Mahi seasoned with (you guessed it “Simply Greek Seafood  Blend” found through the link on my front page).


I then stirred the Basil and Pine nuts into the Orzo dish.
