Veggie soup………

These wonderful Veggies are going to become Soup for a lunch or more this week.
Green and Purple Cauliflower, Broccoli, Italian Green Beans, Tomato, Spring Onions, Roasted Golden Beets, Sweet Peppers, Kohlrabi, Carrots and Cabbage.
Wash, trim and cut the veggies into bite size pieces. In a Soup Pot over a medium heat, drizzle about a tablespoon of Olive Oil. Add Kohlrabi, some of the Spring Onions and the stalks of the Brocolli and Cauliflower. Saute til a bit golden. Add a good quality Vegetable stock (low sodium preferred). This will deglaze the Pot and add all that wonderful flavor to your Soup.
Add the rest of the veggies, stir well, season to your liking, lower heat to a gentle simmer, place lid on pot. Let it talk.

It is done when the veggies are to your likng.
