Taco Salads tacosalad3

  • 1 lb. Or more of Lean ground meat, browned and seasoned with you favorite taco seasoning (Ortega, El Paso or your own blend). I always cook extra for lunches or another dinner.
    1 can Black Beans or Refried if you like.
    1 pkg. Fajita size Tortillas or Ready made Tortilla Bowls.
    A bag of shredded Lettuce or if you already have Lettuce just chop that up
    Shredded Cheese
    Sour Cream
    Cholula Hot Sauce my favorite
    Guacamole or sliced Avocado
    Please play with this recipe. Make it your own.

  • Tomatoes Lots of different colors and kinds
    The Beautiful Green tops of Spring Onions
    (Both from the Farmer’s Market)
    Lime juice to taste
    a pinch each Salt and Sugar
    Mix well set in the fridge to talk.

When you can’t get fresh or in my house I’m the only one that likes Cilantro. I have come to a conclusion over the years. Cilantro is one of those things people either love or hate.

Tortilla Bowls made simple


Tortilla Bowl pans are a quick and healthy way to make Tortilla Bowls. Preheat oven to 365 degrees. Spray Pans with Trader Joe’s Olive Oil. Place the Tortilla in the pan and mold the Tortilla to the pan. Spray with the Olive Oil and place in the oven for approximately 5 minutes or until light brown. Let it cool to touch.
Now go play with your food and build your own creation. YUM

Ingredients for 2

1 piece Mahi Mahi-I used Archer Farms frozen found at Target. It has always been good quality.
Simply Greek Seafood blend…flavorful with a hint of Citrus.
3 small ears of Corn-Farmer’s Market first of the season
3 or more small Summer Squash
Seasoned with……you guessed it Simply Greek Potato n Veg blend
Isn’t the Mahi Mahi gorgeous? Simply season make it pretty using you Grill pan and finish off in the oven. Heated to 365 degrees for no more than 5 minutes. Let rest.

First Corn of the season, small sweet kernels. I microwave my corn. I know what you’re thinking, but in less than 5 minutes you have perfectly cooked fresh Corn.

I grill the Squash first and set it aside til I am ready to Grill the Mahi Mahi. I put it the oven to warm through at the same time I bake the Mahi Mahi.
